Crabbie’s BBQ Prawn Skewers and Garlic Mayo

BBQ Prawn Skewers with Garlic Mayo2

 

Serves: Four

 

Ingredients

  • 20 large shelled prawns   
  • 5 wooden skewers (soaked in water)  
  • 300ml soy sauce   
  • 200 ml of Crabbie’s Alcoholic Ginger Beer
  • 2 shallots   
  • 1 Chilli   
  • 50g fresh basil   

 

For the Mayo   

  • 200g of Mayo   
  • 20 g of Garlic puree   

 

Method

  • Skewer four prawns with wooden skewers, set aside
  • In a bowl mix the Kecap manis with the Crabbie’s Alcoholic Ginger Beer, chop the shallots and chilli add to the mix, transfer to a tray
  • Place the prawns in the marinade, leave for about 20 min
  • Mix the mayo and garlic, place in a ramekin
  • Cook the prawns on the BBQ for about 2 min each side
  • Chop the basil up place on top on the BBQ prawns add the garlic mayo
  • Serve
