Crabbie’s Chorizo and Tomato Stew with Sea Bass

Crabbies & Chorizo Stew with Seabass1

Cook: 1.5 hours

Serves: Four

 

Ingredients

  • 500g of Chorizo
  • 400g of tinned tomatoes
  • 3 pepper (1 red, orange & green)
  • 1 Spanish onion
  • 1 red onion
  • 1 punnet of cherry tomatoes
  • 400g of new potatoes
  • 500ml bottle of Crabbie’s Original Alcoholic Ginger Beer

 

Method

  • Slice the pepper & onion into thick slices
  • Start to sauté in a large pot
  • Once soft add the chopped & cherry tomatoes
  • Slice up the Chorizo & new potatoes add to pot
  • Add the bottle of Crabbie’s Original Alcoholic Ginger Beer and reduce down until a thick stew consistency
  • Serve

 

Terms

  • To reduce, cook in a pan until liquid evaporates.
